| | Oven Fried Chicken w/Tomato Sauce
3 pounds of chicken pieces 2 to 3 tablespoons of flour salt and pepper to taste 1/8 teaspoon of paprika 1 to 2 eggs, beaten 6 to 8 tablespoons of cornflakes or bread crumbs 4 tablespoons of melted butter
Tomato Sauce 2 tablespoons of butter 1 onion, finely chopped 1 clove garlic, peeled and crushed 1 tablespoon of flour 2 tablespoons of tomato paste one 8 ounce can of tomatoes 1 cup of chicken broth 1 teaspoon of fine herbs 6 peppercorns 1 strip of lemon peel 1/8 teaspoon of cayenne pepper 1 teaspoon of sugar, optional salt and pepper to taste
Preheat oven to 400ºF. Roll chicken pieces in flour seasoned with salt, pepper and paprika. Brush thoroughly with beaten egg and roll in cornflake or dried bread crumbs. Put chicken in well buttered ovenproof dish. Pour melted butter over chicken. Bake for 30 to 35 minutes or until chicken pieces are crisp and brown. While chicken is baking, prepare tomato sauce. Melt butter in saucepan. Add onion and garlic and sauté until golden. whisk in flour, tomato paste, tomatoes and broth. Bring to a boil. Add herbs, peppercorns, lemon peel, and cayenne pepper, simmer for 20 minutes. Strain sauce and add sugar, if desired. Season with salt and pepper. Serve hot chicken with sauce and rice or mashed potatoes. Serves 4 |
