| | Parslied Parmesan Chicken
3/4 cup of fine bread crumbs 2 tablespoons of Parmesan cheese 3 tablespoons of chopped fresh parsley 1/2 clove garlic, crushed 1/4 teaspoon of salt 1/4 teaspoon of pepper 2 1/2 to 3 pound chicken fryer parts, skinned 1/2 cup of vegetable oil
Combine the first 6 ingredients in plastic bag, shake to mix. Place the chicken in bag, 2 pieces at a time, shaking to coat thoroughly. Place oil in a 15x10x1" pan, heat to 400ºF. for 5 - 8 minutes until very hot. Add the chicken, bake at 400ºF. for 40 minutes or until done, turning once. Serves 4 |
