Roasted Chicken

two 2 1/2 - 3 pound broiler fryers, whole
salt, pepper and garlic powder to taste
Onion powder, to taste
paprika, optional



Season the chickens generously with salt, pepper, garlic powder and onion powder and place in a roasting pan. Do not add water to the pan. Bake, uncovered at 325ºF. for 1 hour. Turn chickens over, breast side down and season the backs. Continue roasting for 1/2 hour. Turn the chickens back, breast side up and raise the heat to 375 for 15 minutes. Sprinkle with paprika, if desired and bake for another 10 minutes. Serve.
