Savory Chicken with Rice

1 2 1/2 to 3 pound broiler fryer
salt
2 cups of water
1 cup of uncooked rice
2 tablespoons of butter, or margarine
1 package of dry onion soup mix



Remove back, neck, and wing tips from chicken. Cut remaining chicken into four pieces. Sprinkle lightly with salt. Cook rice per package directions. Place cooked rice into a covered, buttered casserole, reserving one tablespoon of the butter. Sprinkle with half of dried onion soup mix. Place chicken over top of rice; cover with remaining dry onion soup mix. Dot with butter and cover. Bake at 350ºF.  for 1 hour and 30 minutes. Serves 4.
