| | Chicken Drumsticks in a Roasting Bag
8 chicken drumsticks 1 teaspoon of salt 1 tablespoon of paprika 2 tablespoons of butter 1 onion, cut into wedges 1 cup leeks, white part only, cut into 1 1/4 inch pieces 1/4 medium cauliflower, divided into florets 2 red peppers, seeded and diced 1/2 cup of chicken broth 2 tablespoons of medium dry sherry 2 tablespoons of chopped chives
Preheat oven to 425ºF. Rub drumsticks well with salt and paprika. Melt butter in frying pan. Brown drumsticks over low heat. Place drumsticks in roasting bag with onion, leeks, cauliflower florets and red peppers. Add chicken broth. Seal bag and pierce top several times. Lay roasting bag in baking dish and bake for 35 minutes. Remove food carefully from bag and place drumsticks, vegetables and cooking juices on serving dish. Before serving, sprinkle with sherry and chives. Serves 4 |
