Chicken Drumsticks with Lentils

2 1/4 cups of lentils
6 1/2 cups of water
1 cup of dry red wine
8 chicken drumsticks
1 chicken bouillon cube
1 bay leaf
1 dried chili pepper
1/8 teaspoon of freshly ground black pepper
1/2 teaspoon of thyme
1 teaspoon of basil
1/4 pound of bacon, diced
2 onions, sliced into rings
1 clove garlic, peeled and crushed
1/8 teaspoon of salt
2 tablespoons of chopped parsley



Wash lentils several times in bowl of water. Place lentils in large saucepan, cover with water and red wine, and bring to a boil. Add drumsticks, crumbled bouillon cube, bay leaf, chili pepper, thyme and basil. Bring to a boil again, cover, and simmer for 45 minutes.
Cook the bacon in skillet until crisp. drain. Add onions to pan and sauté until golden brown. Add garlic and continue sautéing until brown.
Spoon onion mixture over lentils and chicken. Before serving, season with salt and sprinkle with chopped parsley. Serves 4
