West Indian Drumsticks

12 chicken drumsticks
3/4 teaspoons of salt
1/2 teaspoon of paprika
1 tablespoon of cornstarch
1 tablespoon of sugar
1 cup of orange juice
1 1/2 teaspoons of curry powder
1 teaspoon of grated orange peel
1/2 teaspoon of ginger
2 cloves garlic, peeled and crushed
1/2 cup of chopped cashews



Preheat oven to 375ºF.
Place chicken in large baking dish and sprinkle with 1/2 teaspoon of salt and paprika. Bake for 30 minutes.
Mix cornstarch and sugar together in large saucepan. Stir in orange juice, curry powder, orange peel, ginger, garlic, and remaining 1/4 teaspoon of salt.
Cook, stirring over medium heat until mixture boils and thickens.
Pour sauce over chicken and bake about 25 minutes or chicken is fork tender. Baste once with pan juices halfway through baking time. Before serving, sprinkle with cashews. Serves 6
