Oven Fried Chicken

1/4 cup of butter or margarine, melted
1/2 teaspoon of salt
1/4 teaspoon of pepper
one 2 1/2 to 3 pound broiler fryer chicken, cut up
1 cup of crushed cornflakes or crushed potato chips or 1/2 cup of fine dry bread crumbs



Combine butter, salt, and pepper. Brush chicken with butter mixture, then roll in cornflakes, potato chips, or bread crumbs. Place chicken, skin side up, without touching in an ungreased, large shallow baking pan. Bake at 375ºF. until tender, about 1 hour. Do not turn. Season to taste with salt.
Makes 4 servings
