Pan & Oven Fried Chicken
Adapt this easy technique to fry large quantities

1/4 cup of all purpose flour
1 1/2 teaspoons of salt
1 teaspoon of paprika
1/4 teaspoon of pepper

one 2 1/2 to 3 pound broiler fryer chicken, cut up
2 tablespoons of cooking oil or shortening




In a paper or plastic bag combine the flour, salt, paprika and pepper. add 2 or 3 chicken pieces at a time and shake to coat evenly.
In a 12 inch oven going skillet, heat oil. Brown chicken in hot oil over medium heat about 15 minutes, turning to brown evenly.
Transfer skillet to a 375ºF. oven. Or remove chicken  from skillet and place, skin side up in an ungreased large shallow baking pan. Bake at 375 until chicken is tender, 35 to 45 minutes. Do not turn. Makes 4 servings
