Greece - Meat Stew
2 pounds of stewing beef, cubed 1/4 cup of olive oil 1 teaspoon of salt Freshly ground black pepper 1 bunch of whole scallions 2 tablespoons of wine vinegar 2 bay leaves 2 cloves 1 cinnamon stick 2 cups of water 3 carrots, sliced 3 large potatoes, cut in large cubes |

Brown the beef in the olive oil for 5 minutes. Add the salt, pepper, scallions, wine, vinegar, bay leaves, cloves, cinnamon stick and water. Bring to a boil and simmer, covered, for 1 1/2 hours. Add the carrots and potatoes and continue cooking for 30 minutes or until the vegetables are tender.
Remove the bay leaves and cinnamon stick and serve with rice. 6 servings
