| Baked Picnic Ham
4 - 5 pound smoked picnic shoulder with bone Whole cloves 1 cup of dark corn syrup 2 teaspoons of dry mustard 1/2 teaspoon of powdered clove |

Preheat oven to 325ºF. Scrub meat well with brush. Rinse, drain. Place on rack, fat side up, in shallow roasting pan. Bake 30 - 35 minutes per pound, about 2 1/2 hours or until internal temperature registers 170ºF. on meat thermometer. Remove from pan. with sharp knife cut rind off ham. Score fat by making diagonal cuts 1/4 inch deep across ham. Push whole cloves into fat. Combine syrup, mustard and powdered cloves. Pour 1/3 over roast. Return pan to oven. Bake 30 minutes. Baste twice during this period with remaining syrup mixture. Makes 8 or more generous servings |
