Glazed Smoked Shoulder Butt

2 1/2 pound smoked shoulder butt
whole cloves
1/2 cup of brown sugar packed
3 tablespoons of cider vinegar
3/4 teaspoon of dry mustard



Place meat in deep kettle and cover with water. Simmer, do not boil, about 50 minutes per pound or until tender. Remove from water. Place in baking pan. Preheat oven to 400ºF.  Stud meat with cloves. Combine sugar, vinegar, and mustard. Spread on meat. Bake 15minutes or until top is glazed and very hot. Makes 6 - 8 servings
