Baked Ham

1 Ham, whole(16-18lb)
5 cups of water
1/2 cup of  cider vinegar
2 celery ribs
2 bay leaves
1 teaspoon of thyme
6 cloves, whole
a dash of allspice
2 garlic cloves, chopped
1 onion, small, chopped
2 cups of brown sugar, light, firm pack
Pineapple slices, canned
Cloves
Watercress
Sprigs of parsley

 

Place the ham in a roasting pan. Combine the water, vinegar, celery, bay leaves, thyme, cloves, allspice, garlic and onion; pour over ham. Bake in preheated 350ºF. oven 3 1/2 to 4 hours, basting once every hour. Remove from oven; cool and remove skin.  Sprinkle with brown sugar; decorate with pineapple rings and stud with cloves. Bake in 300ºF. oven until sugar browns and dries. Garnish with watercress or parsley and serve .
