Beef & Eggplant Casserole
2 pounds of ground beef 1 medium onion, chopped 1 green pepper, chopped two 8 ounce cans of tomato sauce 1 teaspoon of salt 1/2 teaspoon of dried oregano 1/2 teaspoon of dried basil 1/8 teaspoon of black pepper 2 medium eggplants, cut into 2" cubes 1/2 pound of mozzarella cheese, sliced |

Brown meat in a heavy skillet. Add onion and pepper; cook about 2 minutes, stirring frequently. Add tomato sauce, salt, oregano, basil and pepper; stir well to blend. Cook 5 - 10 minutes. Place eggplant in buttered 13 3/4"x9 1/2" x2" baking dish. Pour meat mixture over eggplant. Bake in a moderate oven 350ºF. for 20 - 25 minutes or until hot and bubbly. Arrange cheese slices on meat. Continue to bake 5 - 10 minutes or until cheese melts. 8 - 10 servings
