| | Cranberry Turkey Burgers
12 ounces of lean ground turkey 1 onion, finely chopped 1 tablespoon of chopped fresh sage 6 tablespoons of dry white bread crumbs 4 tablespoons of cranberry sauce salt and pepper 1 egg white, lightly beaten 2 teaspoons of sunflower oil
To serve 4 toasted whole wheat burger baps 1/2 lettuce, shredded 4 tomatoes, sliced 4 teaspoons of cranberry sauce
Combine the turkey, onion, sage, bread crumbs, and cranberry sauce and season to taste with salt and pepper. Bind with egg white. Press into 4 rounds, about 3/4 inch thick and 4 inches in diameter. Chill the burgers for 30 minutes. Line a broiler rack with baking parchment, making sure the ends are secured underneath the rack to ensure they do not catch fire. Place the burgers on top and brush lightly with oil. Put under a preheated moderate broiler and cook for 10 minutes. Turn the burgers over and brush again with oil. Cook for another 12 - 15 minutes, until cooked through. Fill the burger baps with lettuce, tomato, and a burger and top with cranberry sauce. |
