Tomato Kraut & Franks
1 (16-ounce can of sauerkraut 1/2 teaspoon of pepper 1 (4-ounce) can of mushrooms 1 medium onion, thinly sliced 1 cup of tomato juice 8 frankfurters, cut into 1-inch pieces |

Drain sauerkraut; rinse with cold water and drain again. Grease or spray 1 1/2 quart casserole. Mix sauerkraut, mushrooms, onions, and frankfurters. Put in casserole, sprinkle with pepper and pour tomato juice over all. Cover and bake at 350ºF. 45 minutes. Then uncover and bake 15 minutes longer. Serves 4.
