| | Broiled Shrimp Kebabs
1 pound of fresh or frozen large shrimp in shells, thawed 1/4 cup of cooking oil 4 lemon slices 4 whole allspice 3 garlic cloves, minced 1 teaspoon of crushed dried tarragon 1 teaspoon of crushed dried oregano bay leaves, optional
Peel and devein shrimp, leaving the tail intact, if desired. In a shallow dish, combine oil, lemon, allspice, garlic, tarragon, and oregano. Add shrimp. Cover and marinate for 1hour at room temperature, stirring occasionally. Or marinate overnight in the refrigerator. Preheat broiler. Drain shrimp, reserving marinade, discard lemon and allspice. Thread shrimp on short skewers alternately with bay leaves, if desired. Place on unheated rack of broiler pan. Broil 4 inches from heat for 3 to 4 minutes or until shrimp turns pink, turn and brush occasionally with reserved marinade. Makes 4 servings |
