| | Fruit Turkey Kabobs
3/4 pound of cooked boneless turkey roast, cut in twelve 1 inch cubes 1 orange, cut in wedges 1 firm pear, cut in wedges 1 green pepper, cut in squares 4 small spiced crab apples 1/2 cup of jellied cranberry sauce 1/2 cup of apricot preserves 1/2 cup of light corn syrup 1/4 cup of lemon juice 2 tablespoons of butter or margarine 1/4 teaspoon of ground cinnamon A dash of ground cloves
Thread pieces of turkey, orange, pear, green pepper and crab apple onto four 10 inch skewers. In saucepan combine remaining ingredients; bring to boiling, stirring occasionally. Brush sauce over turkey and fruit. Grill about 4 inches above medium hot coals till meat and fruit are hot and well glazed, 5 to 10 minutes. Turn and brush occasionally with sauce. Pass remaining sauce. Makes 4 servings. |
