1 cup of red wine 1/3 cup of sherry 2 tablespoons of soy sauce 1 teaspoon of sesame oil 1/2 teaspoon of gingerroot, grated 1 cup of pineapple juice 1 teaspoon of thyme 1 teaspoon of rosemary 1/4 cup of Worcestershire sauce 1 onion, chopped 1/2 teaspoon of pepper 1 1/2 pounds of sirloin steak, diced 3 tomatoes, sliced 12 mushrooms 1 eggplant, diced 1 green bell pepper, diced 1 yellow squash, diced
In a bowl, combine red wine, sherry, soy sauce, sesame oil, grated ginger root, pineapple juice, thyme, rosemary, Worcestershire sauce, chopped onion, pepper. Pour over diced sirloin steak. Marinate for 2 hours at room temperature. Alternate the beef on skewers with sliced tomatoes, mushrooms, diced eggplant, diced green bell pepper, and diced yellow squash. Grill 3-inches from the heat for about 15 minutes, turning frequently and basting with the marinade.
