Baked Kubbe

 

Baked Kubbe

2 cups of cracked wheat (burghol)
2 pounds of ground ham
1 1/2 teaspoon of salt
1/4 cup of minced onion
1/2 pound of lamb fat, sliced thin
Butter for dotting




Soak the wheat in water for about an hour. Drain. Mix with half of the ground lamb. whirl in the blender, a little at a time, until it becomes a smooth paste. In the bottom of a 2 - 2 1/2 quart casserole make a layer of half of the paste. Mix the remainder of the ground lamb with the salt and onions. Place a thin layer of this mixture over the paste, then a layer of lamb fat, then the rest of the ground lamb. Cover with the remainder of the paste. Dot with a little butter. Bake in 350ºF. oven for 50 minutes or until the top is brown and crisp. Serves 6 - 8
