Broiled Lamb Kidney

8 lamb kidneys
1/2 cup of melted butter
4 scallions, chopped
1 cup of fresh mushrooms




Before cooking, slice open and remove membrane and hard white parts from kidneys. Rinse. Place kidneys in shallow pan, brush with butter and broil for 10 minutes on each side. Sauté scallions and mushrooms in a saucepan in remaining butter and pour over broiled kidneys.
