Curried Lamb Stew

 

Curried Lamb Stew

4 teaspoons of curry powder
1 tablespoon of salt
1/2 teaspoon  of ground black pepper
1/4 cup of flour
2 pounds of boneless lamb shoulder
2 tablespoons of shortening
2 cups of water
2 cups of cubed potatoes
1 cup of sliced carrots
1 cup of sliced celery
1/4 cup of onion flakes
1/4 teaspoon of instant minced garlic
1 cup of frozen peas
1/8 teaspoon of ground ginger


Combine the curry powder, salt, black pepper and flour. Trim fat from meat, roll meat in seasoned flour,. Brown in shortening, add water. Cover and simmer for  1 hour and 30m minutes, add vegetables, onion flakes and minced garlic. Cover and cook for 20 minutes longer or until meat and vegetables are tender. Add peas and ginger, cover and cook for 10 minutes longer or until peas are down. Makes 6 servings.
