Greek Herbed Lamb with Rice
4 lamb shanks 1 cup of white wine 1 tablespoon of dried oregano, crushed 1 tablespoon of dried mint, crushed 1 teaspoon of green peppercorns, crushed 1/4 teaspoon of salt 2 cloves garlic, minced 1 cup of uncooked rice
Place lamb shanks in a slow cooker with meaty ends down. In a small bowl, combine wine, oregano, mint, peppercorns, salt and garlic. Pour mixture over lamb. Cover and cook on LOW 7 to 9 hours or until meat is tender. Remove meat from bones, discard bones. Return meat to cooker. Turn control to HIGH. Add rice; cover and cook 1 hour. Makes 4 to 6 servings
