Lamb Stuffed Tomatoes 4 large tomatoes
1 tablespoon of butter Basic-Recipes.com 9/18/06
1 tablespoon of flour
1/2 cup of cream
1 cup of ground lamb
1/4 cup of chopped mushrooms
salt and pepper to taste
1/4 cup of grated Parmesan cheese
2 tablespoons of melted butter
Cut tops off tomatoes and hollow them out. Turn upside down to drain. Melt 1 tablespoon of butter and stir in flour smoothly. Add cream and cook, stirring constantly, until thickened. Combine with lamb and mushrooms and season to taste. Stuff into tomatoes. Place the tomatoes in a shallow 6' x 6" casserole. Sprinkle with cheese, then with melted butter. Bake in 375ºF. oven for 25 - 30 minutes until brown on top. Serves 4
