Lamb Squash Casserole
4 pounds of lean lamb 6 tablespoons of butter 2 large onions 2 cloves garlic, minced 4 tablespoons of flour 3 cups of water 1 teaspoon of cinnamon 1 teaspoon of grated ginger 1 teaspoon of cardamon 1 cup of raisins 1 teaspoon of sea kelp 1 tablespoon of salt 6 yellow squash, cubed 1/2 cup of fresh lemon juice
Cut the meat into small strips and sauté in butter. Pour this in a large baking dish. Sauté onions and garlic. Stir in flour, water, cinnamon, ginger, cardamon, raisins, sea kelp and salt. Cook a few minutes while stirring constantly. Pour sauce over meat in the baking dish. Bake for 30 minutes. Add squash and lemon juice. Cook for 10 minutes more. |
