In a food processor combine the cilantro leaves, mint leaves, honey, vinegar, 1/2 cup of the oil, salt, and pepper; process until smooth. Pour 1/4 cup of the mixture over lamb chops in a large shallow dish or resealable plastic bags; cover or seal and marinate in the refrigerator for 1 hour. Reserve remaining marinade mixture in the refrigerator. Remove lamb chops from marinade; discard marinade. Heat the remaining 2 tablespoons oil in a nonstick skillet over medium high heat. Add the lamb chops; cover and cook 13 minutes on each side or until a meat thermometer registers 160ºF. Serve with reserved marinade and garnish with cilantro and mint leaves if desired.
