Low Carbohydrate Tarragon Lamb
1 small 8 chop rack of lamb, about 1 1/2 pounds 1 large clove garlic, slivered 2 tablespoons of olive oil 2 tablespoons of dried tarragon 1 tablespoon of dried thyme 1 tablespoon of coarsely ground black pepper 1 teaspoon of coarse salt
Preheat oven to 500ºF. Make deep slits all over the lamb and insert the garlic slivers. Brush the chops lightly with olive oil. In a medium bowl, combine the tarragon, thyme, pepper and salt and pat all over the lamb. Place the lamb, fat side up, in roasting pan. Insert meat thermometer from side, avoid toughing the bone. Roast for 10 minutes.
Reduce the heat to 400ºF. and roast another 20 - 30 minutes depending on desired doneness as indicated by appearance of meat and meat thermometer. Remove from the oven and let rest for 5 minutes before carving. Serve immediately. Serves 4 |
