Mexican Lamb with Red Wine

4 lamb shanks
1 cup of red wine
1/4 cup of chili powder
1/2 teaspoon of ground ginger
1 teaspoon of ground cumin
1 teaspoon of dried oregano
2 cloves garlic, minced
1/4 teaspoon of salt
Rice or tortillas
Salsa




Place lamb in a slow cooker with meaty ends down. In a small bowl, combine wine, chili powder, ginger, cumin, oregano, garlic and salt. Pour mixture over lamb shanks. Cover and cook on LOW 7 to 9 hours or until meat is very tender. Remove meat from bones; discard bones. Return meat to liquid. Serve over rice or wrap in warm tortillas with salsa. Makes 6 servings
