Orange Glazed Rack of Lamb1 rib rack of lamb
1/2 cup of orange marmalade
1 tablespoon of brown sugar
2 teaspoons of prepared mustard
3 tablespoons of lemon juice
Orange slices and maraschino cherries for garnish
Place the lamb on a rack in a roasting pan. Roast in a 350ºF. oven for 1 1/4 hours, or until a meat thermometer registers 175 to 180ºF. Meanwhile combine the marmalade, brown sugar, mustard, and lemon juice in small saucepan and heat, stirring constantly until blended. Baste lamb with mixture during the last half hour. Garnish with orange slices and cherries.
