Roast Lamb w/Dressing
1 lamb shoulder salt, pepper, and curry powder to taste a pinch or two of dry mustard 1/2 onion, chopped 2 cups of celery, chopped 8 cups of whole wheat or white bread cubes 3 tablespoons of butter 1/2 cup of whole wheat flour 2 tablespoons of Kitchen bouquet
Have your butcher remove bone or remove it yourself. Cook the bone in 2 quarts of water to make stock. Rub lamb inside and out with seasoning. Combine all the other ingredients for dressing, pour 1/2 cup of stock over and cook for 1 hour at 325ºF. Place dressing inside of lamb and roll up and tie with small rope and bake for 2 hours at 325, basting with lamb stock and 2 tablespoons of Kitchen bouquet and 1/2 cup of whole wheat flour whisked in with wire whip |
