| | Cocktail Meatballs
1 large onion, minced 2 tablespoons of olive oil 1 1/2 pounds of freshly ground round steak ( half each of lamb and veal) 3 tablespoons of cracker meal 2 cups of firm type bread, crust removed 2 eggs 6 tablespoons of chopped parsley 2 teaspoons of oregano, crushed 1 1//2 teaspoons of mint 2 tablespoons of vinegar salt and pepper to taste Flour Olive or corn oil for deep frying heated to 365ºF.
Brown half of onion in 2 tablespoons of oil in a small frying pan. Mix with the uncooked onion and add to meat in a large bowl. Add the remaining ingredients except flour and oil. Toss lightly with two forks to mix thoroughly. Dust hands with flour. Roll a small amount of meat at a time between palms, shaping into a ball. To heated fat in deep fryer, add the meatballs a layer at a time. Fry until browned on all sides, about 12 minutes. Serves hot. Makes 30 - 40 meatballs |
