| | Italian Meat Balls
1 pound of ground beef 1/2 pound of ground pork 2 eggs 1/4 cup of bread crumbs 3 tablespoons of parsley flakes 1 teaspoon of salt 1 teaspoon of grated lemon rind 1/4 teaspoon of dried oregano 1/4 teaspoon of black pepper 1 tablespoon of salad oil
Combine all ingredients except oil; mix lightly to blend. Shape into 12 balls. Heat oil in a large skillet; brown meatballs in oil until cooked to desired doneness.
Skewers
1 recipe for meatballs 1/2 pound of salami, cut into 1 inch cubes 1 green pepper 12 small canned onions 2 tablespoons of melted margarine or butter
Prepare meatball recipe as above. Shape into 24 rolls 2" long and 1" wide. Blanch and seed pepper; cut into 1" chunks. Thread meatballs, pepper, salami and onions alternately on skewers. Brush vegetables with margarine. Broil, 3 -4" from heat, until meatballs are cooked, about 5 minutes, turning frequently. 6 Servings |
