| | Jiffy Meatball Casserole
1 pound of ground beef 1/4 cup of minced onion 1 1/2 teaspoon of salt 1/2 teaspoon of Tabasco sauce 1 cup of rice 1 can (1 pound) of stewed tomatoes 1 bouillon cube
Combine ground beef, onion, 1 teaspoon salt and 1/4 teaspoon Tabasco sauce in a bowl, mixing well. Shape into 8 balls and roll in rice to coat. Place in greased 2-quart casserole. Mix remaining 1/2 teaspoon salt and 1/4 teaspoon Tabasco sauce with tomatoes in a bowl. Pour over casserole and sprinkle remaining rice over top. Bake, covered, at 350 degrees for 1 hour and 10 minutes, or until rice is tender. Serves 4.
