Thrifty Meat Balls 

1 pound of ground beef
1/4 cup of chopped onion
1/4 cup of uncooked rice
1/4 cup of fine cracker crumbs Basic-Recipes.com6
1/3 cup of milk
1 1/4 teaspoon of salt
1/8 teaspoon of pepper
1/4 teaspoon of poultry seasonings
2 tablespoons of fat or bacon drippings
1 can of condensed tomato, cream of celery or mushroom soup
3/4 cup of hot water




Combine the beef, onion, rice, cracker crumbs, milk, salt, pepper, and poultry seasoning. Mix with fork until blended. Shape into small balls. Brown meat balls in fat in preheated 360ºF. skillet. Add soup which has been diluted with water; cover and reduce temperature to 200ºF. and simmer for 1 hour and 15 minutes, stirring occasionally. Remove meat balls to heated platter.
