| Sunday Beef Roast 1 eye of round beef roast, about 3 pounds 1 teaspoon of salt 1/2 teaspoon of seasoned salt one 24 ounce package of baby potatoes 4 medium carrots, peeled and cut into 2 inch pieces 3 medium onions, cut into wedges
Preheat your oven to 325ºF. Place beef in roasting pan coated with nonstick cooking spray. Sprinkle with seasoned salt and lemon pepper. Bake for 1 hour. Add potatoes, carrots and onions. Bake for 1 hour more or until thermometer registers 160ºF. Place roast on serving platter. Cover with foil and let roast stand for 10 minutes before serving. Keep vegetables warm. Serves 8 |
