Nut Loaf

3 tablespoons of butter
1 onion, minced
1/2 cup of bread crumbs
1 cup of chopped tomatoes
1 cup of chopped nuts, preferably walnuts
1 egg, beaten
2 tablespoons of chopped parsley
3/4 teaspoon of salt
1/4 teaspoon of paprika
1 teaspoon  of grated lemon peel



Preheat oven to 375ºF.   Sauté onion in butter until soft. Combine with other ingredients in a greased baking dish. Bake for 20 minutes, then brown under the broiler. Serve with tomato sauce. Serve with broccoli or any green leafy vegetable.
