Pepper Steak

 

Pepper Steak

1 1/2 pounds of round steak, 1/2 inch thick
1 cup of sliced onion
1 cup of beef broth
2 stalks celery, chopped
1 tablespoon of salt
1/2 teaspoon of garlic powder or 1 garlic clove, minced
1/2 teaspoon of ginger
2 green peppers, cut in strips
1 cup of sliced mushrooms
one 1 pound can of tomatoes, chopped
3 tablespoons of soy sauce
2 tablespoons of cornstarch
1 cup of water

Cut round steak into thin strips and brown in Dutch Oven in small amount of oil and margarine. Add beef broth, onion, celery, salt, garlic and ginger, simmer, covered, for 35 - 40 minutes or until tender. Add green peppers, mushrooms and tomatoes, cook an additional 10 minutes. Mix soy sauce and cornstarch in 1 cup of water until smooth. Slowly stir into sauce and cook, stirring constantly until thickened. Serve over rice. This can be made the day before serving and reheated in the microwave.
