| Pork Loin Paprika
1 loin of pork, about 4 - 5 pound salt and pepper 3 tablespoons of vegetable oil 2 yellow onions, chopped 2 red peppers, coarsely chopped 2 green peppers, coarsely chopped 1 clove garlic, put through a garlic press 2 tablespoons of paprika 3 tablespoons of flour 2 cans of chicken broth 1 can of water 1/2 cup of sour cream |

Season the loin of pork with salt and pepper. In a heavy sauté pan, heat the oil; add the pork and brown on all sides. Remove the pork and put aside. Add the onions to the sauté pan and sauté until lightly browned, then add the peppers and garlic and continue sautéing for another few minutes, then add then add the paprika and flour and combine well. Then add chicken broth and water, bring to a boil and return the browned loin of pork to this. Cover and simmer for about 1 1/2 hours. Remove the pork and slice: add the sour cream to the sauce and combine well. Make sure not to let it come to a boil. Serve with the sauce served separately. |
