Apple
Buttered Pork Loin
one 5 to 6 pound pork loin, boned,
rolled and tied 1/2 cup of apple butter 2 tablespoons of
peanut butter 1/4 teaspoon of grated orange peel 2
tablespoons of orange juice |

Balance roast on spit. Roast over medium coals till meat thermometer registers 170ºF., about 3 hours. Gradually stir apple butter into peanut butter, add orange peel and juice. Brush over entire surface of roast; continue cooking 15 to 20 minutes. Makes 12 to 16 servings.
