Nicely Spiced Pork Loin


 

Nicely Spiced Pork Loin

4 Cloves garlic, minced
1 teaspoon of salt
2 tablespoons of vegetable oil
2 tablespoons of lemon juice
1 tablespoon of paprika
2 teaspoons each of  ground cumin and coriander
1 teaspoon of ginger
1/4 teaspoon of cinnamon
1 Boneless pork loin roast (about 4 lb.)

 

In bowl, mash garlic with salt; mix in oil, lemon juice, paprika, cumin, coriander, ginger and cinnamon. Cut 1 inch deep slits all over top and sides of pork; rub paste all over roast. Roast on roasting rack in pan in 325ºF.  oven for about 1 hour and 45 minutes or until meat thermometer registers 160ºF.   Transfer to platter and tent with foil.
