Roast Loin of Pork
one 4 pound pork loin roast 2 large Spanish onions, quartered 4 large potatoes, halved Oil salt and pepper to taste Powdered sage to taste

Place the pork roast in a shallow baking pan and place onions and potatoes around roast. Brush the vegetables with oil and sprinkle with salt, pepper, and sage. Bake at 325ºF. for 2 hours, basting vegetables with pan drippings every 30 minutes.
