Roast Pork Loin w/Apple Ginger Sauce

2 teaspoons of coarsely crushed fennel seed
1 teaspoon of salt
1/4 teaspoon each of pepper and paprika
4 pounds of pork loin
Apple Ginger sauce

Mix spices and rub well on all sides of pork loin. Put on rack in shallow baking pan and roast in preheated slow oven (325ºF.) 2 1/2 hours or until done. Serve with the sauce. Makes 6 servings

Apple Ginger Sauce

2 cups of canned applesauce
1 teaspoon of grated orange rind
1 tablespoon of minced crystallized ginger

Mix all ingredients in small saucepan and simmer 10 minutes. Serve hot or cold. Makes 2 cups
