Stuffed Pork Tenderloin
2 pork tenderloins of equal size Salt Pepper 3 tablespoons of chopped onion 1/4 cup of butter or margarine 4 cups of dry bread cubes, about 7 slices, cut in 1/2 inch cubes one 6 ounce can of sliced mushrooms, drained 1/2 teaspoon of poultry seasoning 1/2 teaspoon of ground sage 1/4 teaspoon of salt 1/4 teaspoon of pepper 2 to 4 tablespoons of water or chicken broth

Have tenderloins split open lengthwise but do not cut through; flatten. Season with salt and pepper. Cook onion in butter. Combine with bread cubes, mushrooms and next 4 ingredients. Toss with enough liquid to moisten. Spread mixture over one tenderloin; lay other tenderloin on top. Season with salt and pepper and top with bacon slices. Place on rack in shallow roasting pan. Roast, uncovered at 325ºF. for about 1 1/2 hours. Makes 8 servings
