Soy Bean Patties
2 cups of cooked soy beans, ground and mashed 1/4 cup of chopped parsley 2 egg yolks, beaten 1/4 teaspoon pepper 1 teaspoon of salt 1/4 cup of whole wheat flour 2 tablespoons of cream |

Combine beans, onion and parsley. Beat together egg yolks, cream, seasonings, add to bean mixture and shape these into balls. Flatten them, dip in flour and chill the patties for 1 hour or more. Sauté them slowly in butter until brown. Serve them with any tomato sauce.
