Swedish Meat Balls
1 egg 1/2 pound of
lean ground pork 1 cup of cooked, mashed
potatoes 1 packet of sugar substitute 1/2 teaspoon of salt 1/4 teaspoon of ginger 1/4 teaspoon of nutmeg 1/3 cup of whole wheat flour 3/4 cup of evaporated skim milk, undiluted 1 pound of very
lean ground beef 1/4 teaspoon of allspice 1/4 teaspoon of ground cloves 1/4 teaspoon of ground pepper |

In a large mixing bowl, beat egg lightly and combine with remaining ingredients, except flour and milk. Form into 30 walnut size balls. Roll lightly in flour. In medium size non stick skillet, brown a few at a time. Preheat oven to 350ºF. Transfer meat balls to
Dutch oven and cover with milk. Bake, covered, about 1 hour or until fully cooked. Makes 6 servings, about 5 meat balls per serving
