| | Swiss Steak 1 1/2 pounds of round steak 1/4 cup of flour 3/4 teaspoon of salt 1/4 teaspoon of black pepper 3 tablespoons of fat 1 medium onion, chopped 1 1/2 cups of stewed tomatoes 1/2 cup of sliced carrots 1/2 cup of sliced celery |
| Mix the flour, salt, and pepper. Dredge the steak with flour, pound the flour into both sides of the steak. In a Dutch oven, heat the fat, brown the steak well on both sides. Add the vegetables, cover and simmer gently for 1 1/2 hours. Serves 4 | |
