Turkey & Mushroom Creole
1 tablespoon of olive oil 1 onion, chopped 2 cloves garlic, chopped 1
red bell pepper, seeded and chopped 2 sticks celery, chopped 14 ounce can of chopped
tomatoes 1 teaspoon of chili powder a large pinch of cayenne power 1 teaspoon of paprika 1/4 teaspoon of dried thyme 1 pound of
turkey steaks, cut into strips 4 ounces of
button mushrooms, sliced |

Heat the oil in a large heavy based saucepan, then add the onion, garlic, red bell pepper and celery, and cook gently for 10 minutes or until softened.
Stir in the tomatoes, chili, cayenne, paprika, and thyme, and heat through for 1- 2 minutes to release the flavors. Stir in the turkey strips and mushrooms, then cover the pan and cook gently for 30 minutes, stirring occasionally, until the turkey is cooked through and tender. Serves 4
