MOTHER'S DAY MUFFINS
3 Eggs
1 cup of oil
2/3 cup of White sugar (or less)
1/3 cup of Brown sugar
2 cups of Grated zucchini
3 cups of Sifted flour
1 teaspoon of Soda
1/4 teaspoon of Baking powder
3 teaspoons of Cinnamon
1 teaspoon of Salt
1/2 cup of Chopped walnuts
Beat eggs until light and foamy; add sugar, oil and zucchini.
Blend well with spoon. Mix dry ingredients and add to egg mixture;
blend well. Add nuts. Put in greased muffin tins. Bake at 325ºF.
for 20 minutes (or 2 bread loaves for 1 hour). Makes 18 large muffins.
