Authentic Guacamole
1 ripe tomato 2 limes 2 - 3 ripe, small to medium avocados or 1 - 2 large ones 1/4 - 1/2 onion, finely chopped a pinch of ground cumin a pinch of mild chili powder 1/2 - 1 fresh green chili, such as jalapeno or Serrano, seeded and finely chopped 1 tablespoon of finely chopped fresh cilantro leaves, plus extra for garnishing salt, optional tortilla chips of vegetable sticks, to serve, optional
Put the tomatoes in a heatproof bowl, pour boiling water over to cover, and let stand for 30 seconds. Drain and plunge into cold water. Peel off the skins. Cut the tomatoes in half, seed, and chop the flesh. Squeeze the juice from the limes into a small bowl. Cut 1 avocado in half around the pit. Twist the 2 halves apart in opposite directions, then remove the pit with a knife. Carefully peel off the skin, dice the flesh, and toss in the bowl of limejuice to prevent the flesh from discoloring. Repeat with the remaining avocados. Mash the avocado flesh fairly coarsely with a fork. Add the onion, tomato, cumin, chili powder, chilies and fresh cilantro to the avocados. If using as a dip for tortilla chips, do not add salt. If using as a dip for vegetable sticks, add salt to taste. To serve the guacamole, transfer to a serving dish, garnish with finely chopped fresh cilantro, and serve with tortilla chips or vegetable sticks. Serves 4 |
