| Hummus & Garlic Toasts
Hummus 1 1/2 cups of canned garbanzo beans juice of 1 large lemon 6 tablespoons of Tahini 2 tablespoons of olive oil 2 garlic cloves, finely chopped salt and pepper
Garlic Toasts 1 ciabatta loaf, sliced 2 garlic cloves, finely chopped 1 tablespoon of chopped fresh cilantro 4 tablespoons of olive oil
To Garnish chopped fresh cilantro pitted black olives
To make the hummus, drain the garbanzo bens (reserve the liquid). Blend in a food processor, gradually adding the lemon juice and reserved liquid. Blend well after each addition, until smooth. Stir in the Tahini and all but 1 teaspoon of the olive oil. Add the garlic, season, and blend until smooth. Spoon the hummus into a serving dish. Drizzle the remaining olive oil over the top, and garnish with chopped cilantro and olives. Let chill in the refrigerator while preparing the toasts. To make the toasts, lay the ciabatta slices on a broiler rack in a single layer. Mix the cilantro, and olive oil together and drizzle over the bread slices. Cook the slices under a hot broiler for 2 - 3 minutes, turning once, until golden brown. Serve hot with hummus. Serves 4
